MIA Again…

Hi! I know I haven’t been around much lately — the truth is, I have been pretty busy with work and family stuff that I haven’t made the blog a priority. Also, I’ve been in a rut lately and haven’t had much to say.

This week should be better, so stay tuned!

MIA

I’m alive! I was enjoying the family and the gorgeous summer weather we had last week. We spent lots of time outdoors — I didn’t photograph my food, either. BAD BLOGGER! :) It was, however, pretty easy to eat healthfully. When the weather is so warm, I don’t like to feel full and eat heavy foods. We had lots of yogurt, salads and sandwiches this week!

Today was another lazy Sunday morning. I rolled out of bed at 9:30 (!!!) and promptly made a pot of coffee. No matter what the weather is like, I still love my caffeine! Sometimes I will have an iced coffee, though.

For breakfast, I made a bowl of 1/2 cup yogurt with 5 strawberries, one kiwi and approximately 1/4 cup granola to top it off:

We made our way to the park for a picnic lunch. I tossed together some spinach, chicken breast, feta and strawberries to make a lovely salad:

TIP: This chicken came from a rotisserie chicken I picked up last week and cut up for sandwiches/salads. It is a great time-saver, but be sure to remove the skin and be sure the chicken doesn’t have any gross additives if you want it to be healthy!

I also brought along some homemade balsamic vinaigrette, which ended up spilling inside my lunchbox coating everything inside. Oops. It was delicious, though!

30 mph winds made for a quick lunch, and we managed to finish without littering the surrounding area with our picnic loot. We decided to head home after playing at the park for about 45 minutes.

The husband and I just finished cleaning up the kitchen from this morning and I am going to start dinner soon. I think I am going to break my not-really-cooking streak from the past week and actually turn on my oven. I will let you know how it turns out!

Happy (belated) Father’s Day!!

Sunday started out with a yummy, quick breakfast:

After breakfast, we started out for our hometown (approximately one hour away) to spend the day with our dads. First, we met my parents for lunch at a local restaurant. It can be so hard to find healthy options in restaurants. Looking over the menu, I found something simple and delicious:

I ate half of the  sandwich and all of the fruit. I thought I did pretty well, considering that the menu was filled with deep-fried this and smothered that. I felt satisfied and not stuffed when I finished, which is exactly what I was going for.

For dinner we grilled out with the husband’s parents. On the menu: grilled shrimp, rice pilaf and steamed green beans. Take a look:

I love seafood, so this definitely hit the spot!

Today has been pretty simple food-wise. For breakfast I had oatmeal and served it this way to use up the last bit of peanut butter:

 I haven’t had oatmeal since I went on the yogurt bowl kick, and actually I couldn’t even finish it all because it seemed too heavy. I missed my yogurt this morning!

So, I had it for lunch! :) I actually had my classic yogurt bowl for lunch since I was craving it so much! I didn’t get a picture becuase I inhaled it – it pretty much looked like this one, minus the blueberries:

After work I had a quick, messy snack before going for a walk/jog with a friend. We did about 3.5 miles in 45 minutes in 90 degree heat. It was tough! I was dripping sweat and starving by the time I walked in. I threw together a taco salad:

The husband and the girl ate traditional tacos, tortillas and all. For the meat, I browned 90% ground beef with red bell pepper, onion and a jalapeño pepper and added a seasoning mix sold by a local taco joint. The seasoning mix includes only things I can pronounce, which is more than I can say about most of the packets you can find at your local market. Like I said, I made mine into a salad. Don’t be deceived, the plate only looked this pretty for the picture and was promptly destroyed. I was sooo hungry!

Low-key Weekend

Happy Weekend!

The girl is spending time with her grandparents this weekend, so the husband and I are on our own. It is our anniversary tomorrow, and we spent last night celebrating. We had dinner at a relatively new restaurant downtown. The food was awesome! We were in the mood for burgers, so we indulged ourselves. I tried a burger topped with fresh mushrooms and Havarti cheese on a perfect bun made by the bakery down the street. It was out of this world! The restaurant started us off with their signature potato chips, which were still hot! They were awesome, too! I took pictures of everything, but forgot my memory card in the laptop at home and I need to find the cord so I can upload them from the internal memory of my camera. I will update later after I figure it out!

We woke up slowly this morning just because we could! For breakfast, I enjoyed some waffles with peanut butter and raspberry preserves and a mango on the side. And some coffee, obviously :)

This morning while the husband went out golfing, I took a trip downtown on my bike to a local coffee house. The trip was about 3 miles each way – approximately 6 miles total! I sipped on an iced green tea while I worked on the blog. Before I knew it, two hours had gone my and I decided to pack up and head home for some lunch.

Lunch was leftover pasta salad from the other night and the last of the watermelon along with it. I also enjoyed a few big glasses of cold water after my ride – it’s 80 degrees out there and I definitely needed it after my long ride!

I’m not sure what is in store for the rest of the day/night. We are kid-less until tomorrow so I think we will take advantage of it and maybe go out for a glass of wine later and catch up with some friends. We’ll see!

It’s Almost Friday!!!

Hello!

Just dropping in to give you a peek at our dinner:

I marinated some chicken breasts in a mixture of olive oil, fresh rosemary + basil, the juice from 1/2 a fresh lemon and some salt + pepper. I let tat hang out until the pasta was al dente and the grill was hot. The pasta salad was inspired by this recipe  from the June issue of Everyday Food magazine and turned out fabulously! I didn’t have arugula or a red onion, so I substituted spinach and part of a yellow onion instead. I wish I had had a red onion, though, because the salad could have used a little color. Next time! I served it all with some watermelon on the side, obviously. We also had a glass of wine and you can see the lemon carcass in my water glass :)

She liked the salad, but preferred the beans to the pasta. The husband didn’t really care for the beans, so I heard a little bargaining going on on that side of the table ;) Overall, this was a realtively quick, healthy dinner to have on a weeknight.

Today turned out to be really nice in spite of the threats for thundershowers. The whole family biked the morning commute – what a great way to enjoy the weather and get a little exercise!

Well, I am off to get the girl ready for bed!

Look Out – Major Recap Ahead!

Hello again! Our weekend away was fun – the weather turned out to be wonderful! I’m talking 85+ degrees and sunny. After the 40 degree weather we have been “blessed” with, it felt AMAZING out there. Needless to say, we enjoyed ourselves.

The girl did lots of this:

I’m sure you’ve noticed the recurring theme in this post – WATERMELON! I had a serious craving for it on Friday so I had someone pick one up. This melon ended up being $11 dollars!!!!!!!!!!! It’s not that $11 is a ton of money, but for a melon??? I am sure glad it’s good, because we will be eating Every. Last. Bite.
It is fun to go away but sometimes it feels better to finally get back home. I went to my usual Tuesday night yoga class tonight and it felt sooooo good! My instructor just returned from her travels to China, so we got to hear about it. Also, we had two new students join tonight – it feels good to finally be an “oldbie” instead of a “newbie”!
Well, off to spend some quality time with the husband!
