Sunday started out with a yummy, quick breakfast:

Whole Wheat Waffles with Peanut Butter and Jam with Mango
After breakfast, we started out for our hometown (approximately one hour away) to spend the day with our dads. First, we met my parents for lunch at a local restaurant. It can be so hard to find healthy options in restaurants. Looking over the menu, I found something simple and delicious:

Turkey Sandwich on Sourdough with Fresh Fruit
I ate half of the sandwich and all of the fruit. I thought I did pretty well, considering that the menu was filled with deep-fried this and smothered that. I felt satisfied and not stuffed when I finished, which is exactly what I was going for.
For dinner we grilled out with the husband’s parents. On the menu: grilled shrimp, rice pilaf and steamed green beans. Take a look:

I love seafood, so this definitely hit the spot!
Today has been pretty simple food-wise. For breakfast I had oatmeal and served it this way to use up the last bit of peanut butter:

There's really only about 1.5 Tbs. of peanut butter in there, I swear!
I haven’t had oatmeal since I went on the yogurt bowl kick, and actually I couldn’t even finish it all because it seemed too heavy. I missed my yogurt this morning!
So, I had it for lunch!
I actually had my classic yogurt bowl for lunch since I was craving it so much! I didn’t get a picture becuase I inhaled it – it pretty much looked like this one, minus the blueberries:

After work I had a quick, messy snack before going for a walk/jog with a friend. We did about 3.5 miles in 45 minutes in 90 degree heat. It was tough! I was dripping sweat and starving by the time I walked in. I threw together a taco salad:

The husband and the girl ate traditional tacos, tortillas and all. For the meat, I browned 90% ground beef with red bell pepper, onion and a jalapeño pepper and added a seasoning mix sold by a local taco joint. The seasoning mix includes only things I can pronounce, which is more than I can say about most of the packets you can find at your local market. Like I said, I made mine into a salad. Don’t be deceived, the plate only looked this pretty for the picture and was promptly destroyed. I was sooo hungry!
